- 3 Medium tomatoes
- 2 Large Cucumbers
- 1 Medium Red or Sweet Onions
- ½ Cup chopped flat parsley
- ¼ Cup Alreef Chickpeas cooked
- ¼ Cup Alreef Diced Beets
- ¼ Cup Alreef dried mint
- ¼ Cup Alreef Olive Oil 100% Extra Virgin
- ¼ Cup Badawi Date Vinegar
- Salt as desired.
- Dice the tomatoes, cucumbers, Parsley, and onions finely. and mix in a bowl.
- Add the dressing ingredients (olive oil, date vinegar, mint) and mix.
- Add the chickpeas and beets and give it a soft mix.
- Keep it in the fridge for half an hour and serve.
- Goes good with meat, rice and stew dishes.
